Bone dry, tannic single orchard cider. In 2021, with slightly smaller crops in Wilding's orchards, they explored interesting traditional orchards for additional fruit. Cooth orchard is certainly a curiosity - an old farm orchard which has outlived the farmhouse and buildings which were lost in a fire last century. The blend is built around Stable Jersey and is high in tannin, very moorish and delicious. Worth experimenting with decanting. Drink with fatty foods like roast pork, braised mutton and strong cheddars.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
