This is the third iteration of Wilding's Eau de Vie and builds on the 2018 batch. Wilding have selected and blended the two best and most instantly drinkable batches of spirit straight from the still, and matured them in a neutral container for 6 months before bottling, to allow the aromas to settle and integrate. The cider itself was wild fermented using hand picked fruit from all of Wilding's orchards. A slow fermentation was followed by over 6 months of maturation in the tank before distillation at Circumstance Distillery. As with previous years this is very drinkable and smooth with aromas
of toffee apple, fennel seed/liquorice, orchard floor, cinnamon.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
