Westcombe Cheddar

Westcombe Cheddar is Westcombe's flagship cheese. An unpasteurised cow's milk cheese that's aged 12-18 months, it is a handcrafted, traditional clothbound Somerset cheddar made from unpasteurised milk in much the same way it was produced at Westcombe Dairy over 100 years ago. Expressing the full character of the East Somerset terroir, Westcombe Cheddar is honoured with the Artisan Somerset Cheddar designation from Slow Food, one of only three cheeses to have this. Without the combination of east Somerset's lush pastures, plentiful spring water, rolling hills and cool mists we're blessed with, Westcombe's cows wouldn't produce the rich milk needed to slowly mature their complex cheeses.
