The new iteration of one of Wilding's favourite ciders, the single orchard selection Ditcheat Hill. As before this is a blend of Yarlington Mill (40%), Browns (40%), Ashton Brown Jersey (15%) and Sweet Coppin (5%). 2022 was very dry and extremely hot, and the fruit was typically very high in sugar, tannin and aromas, giving some very concentrated ciders. This is the most concentrated Ditcheat Hill Wilding have made and is definitely a good candidate for cellaring. Well balanced and elegant, lean acidity, fruity aromas and a tannic grip.
Drink with apple pie, cream tea or creamy curries.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
