Ditcheat Hill is a special orchard and each year Wilding Cider make a blend of the best fruit from there to make a light and easy drinking cider. In 2020 the sugar levels were lower than previously, so Wilding compensated by using a higher proportion of Ashton Brown Jersey and less Sweet Coppin than before. The result is very delicate and well balanced, sweet but complex. Great with cheese, especially buttery cheddars, blue cheese, and soft white mould cheeses. Also good with apple tart or roasted chestnuts.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
