Picked and pressed at the end of October and start of November, this perry is a blend of late ripening varieties from the Perry House Farm orchard in Chew Stoke. Based around Oldfield, with Pine, Hellens Green, White Longdon, Barnett and New Meadow in smaller roles. Racked once during the winter to retain natural sweetness, this has the acidity and tannin to balance. Very gently sparkling. Great with rich cheeses. Drink chilled.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
