The new release of this regular cuvee from Wilding. This time it was all blended during harvest rather than later, a blend of Yarlington Mill, Dove and Browns making up 90% of the tank and 10% Chisel Jersey added to give some extra backbone and a little bitterness on the tongue to hold its own with food. Billed as a table cider, it's well balanced, easy drinking cider with fresh fruit on the nose, palate cleansing acidity and good tannic background with a tiny bit of residual sugar which helps extend its appeal before and after the meal. It's especially suited to those classic cider pairings like pork, ham, Cheddar/Caerphilly/Lancashire cheese, mushrooms. Compared to previous years it is slightly leaner and more structured, with a little more tannin. Made for drinking and it's ready to go.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
