Folly is a very small batch pet nat cider, blended from a mix of apples from South Devon, all from unsprayed orchards. The pressed juice is spontaneously fermented on wild yeasts and bottled just before the end of fermentation, delivering a cider with a natural sparkle and no added sugar. Its named for the Folly on the hill Wildling can see from their orchard.
Wildling Cider is a tiny business making small batch cider using heritage apples from a variety of orchards on the edge of Dartmoor. They particularly love gnarled old trees and fermenting on natural yeasts. The weather, local microclimate and which trees are fruiting, dictates what they pick from year to year, making each year unique.
