Rural method, medium cider. Late harvested Yarlington Mill (50%) and Dabinett (50%) were pressed together in early December and co-fermented spontaneously in very cool conditions without any sharp fruit used. This is unrestrained bittersweet fruit and displays the full gamut of tannin and secondary tannic character. It’s rich and savoury, great with cheddar cheese, pork casserole or mushrooms in cream sauce.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
