Rural method, single orchard cider. For the first time Wilding have made a single orchard Kingston Black, using fruit from five trees in thier new Burlands orchard in Compton Dando. The trees are 35 years old and the fruit was excellent, exhibiting classic Kingston Black aromas of apple pie, toffee apple and orchard floor. Made with the rural method, this cider is naturally sweet with fruity acidity and well balanced tannins. Drink with ripe cheeses or apple puddings. Serve chilled.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
