Medium dry, still, rural method cider. Dabinett (55%) Browns (30%) and Chisel Jersey (15%). This is well structured with
soft tannins and a full body, well balanced with just a little bit of residual sugar and ideal to drink with rich savory
food - hard cheeses, cassarole, roast pork, mushrooms on toast, but also at home with oysters and chips. Rather than
the more usual orange aromas of Dabinett, this is showing aromas of white peach, grape, stewed strawberries and
spice.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
