A light cropping year overall in 2021 led Wilding to do some orchard explorations around their local area, Chew Valley in North Somerset. They discovered some beautiful fruit in this young traditional orchard to produce this very drinkable cider. The light and juicy fruit of Yeovil Sour (gooseberry, lemon zest, pineapple) partners very well with the soft, grippy tannins of young tree Dabinett and Black Dabinett (minerality, marmalade, autumnal orchard). To quote Wilding 'the whole thing is just insanely drinkable. No need for food pairings - you'll drink it before the cooking is finished.'
Wilding Cider are orchard cider makers and farmers, based in Chew Magna, North Somerset. They grow mostly Somerset cider apple varieties in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground in the old way, let mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
