Wilding's first Pomona! This is a blend of three Pomona casks, using spirit from 2019 and 2020 with juice from 2020 and 2021. They have used a blend of bittersweet and sharp fruit for the juice component aiming to have plenty of tannins to handle the long aging. This is great to drink after dinner either by itself or with nuts, dried fruit and cheeses. You
could also serve as an aperitif with ice solo or just the tiniest splash of soda. Wilding are super proud of this, saying it is one of the nicest things they’ve made to date, and it is just perfect for the colder months.
Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.
